  • ¼ cup honey
  • 1 tablespoon lime zest
  • 3 tablespoons lime juice
  • 4 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 23 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 ½ pounds boneless skinless chicken thighs
  • fresh cilantro, to taste
  • 1 green onion, sliced into thin rounds
  • lime wedges, optional

Instructions

  1. In a small bowl, whisk together honey, lime zest, lime juice, 2 tablespoons olive oil, soy sauce, garlic, salt, and pepper to create the marinade.
  2. Place chicken in a medium bowl or large ziptop bag, pour in half the marinade, and coat well. Reserve the other half of the marinade. Marinate for at least 30 minutes, up to 8 hours.
  3. Remove chicken from the fridge about 30 minutes before cooking to allow it to come to room temperature.
  4. Heat 1-2 tablespoons olive oil in a large skillet over medium-high heat. Discard the marinade from the chicken and cook for about 5 minutes per side until it reaches 165°F.
  5. After cooking, remove chicken from the skillet and set aside momentarily.
  6. Add reserved marinade to the skillet and simmer over medium-low heat for 1-2 minutes until it thickens, whisking constantly to avoid burning.
  7. Return the chicken to the skillet and coat it with the thickened glaze.
  8. Garnish with cilantro and green onions as desired.
  9. Serve with lime wedges and your favorite sides.

Notes

For best flavor, marinate the chicken for 1-4 hours.
Use a digital thermometer to check that the chicken reaches at least 165°F for safe consumption.
