- ¼ cup honey
- 1 tablespoon lime zest
- 3 tablespoons lime juice
- 4 tablespoons olive oil
- 2 tablespoons soy sauce
- 2–3 cloves garlic
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 ½ pounds boneless skinless chicken thighs
- fresh cilantro, to taste
- 1 green onion, sliced into thin rounds
- lime wedges, optional
Instructions
- In a small bowl, whisk together honey, lime zest, lime juice, 2 tablespoons olive oil, soy sauce, garlic, salt, and pepper to create the marinade.
- Place chicken in a medium bowl or large ziptop bag, pour in half the marinade, and coat well. Reserve the other half of the marinade. Marinate for at least 30 minutes, up to 8 hours.
- Remove chicken from the fridge about 30 minutes before cooking to allow it to come to room temperature.
- Heat 1-2 tablespoons olive oil in a large skillet over medium-high heat. Discard the marinade from the chicken and cook for about 5 minutes per side until it reaches 165°F.
- After cooking, remove chicken from the skillet and set aside momentarily.
- Add reserved marinade to the skillet and simmer over medium-low heat for 1-2 minutes until it thickens, whisking constantly to avoid burning.
- Return the chicken to the skillet and coat it with the thickened glaze.
- Garnish with cilantro and green onions as desired.
- Serve with lime wedges and your favorite sides.
Notes
For best flavor, marinate the chicken for 1-4 hours.
Use a digital thermometer to check that the chicken reaches at least 165°F for safe consumption.
Feel free to customize garnishes with your favorite herbs or salsas.
