Honey Balsamic Chicken Drumsticks

  • 5 lbs chicken drumsticks
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1/2 teaspoon ground pepper
  • 2 tablespoons olive or avocado oil divided
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1/4 cup ketchup
  • 1/4 cup water
  • 8 cloves garlic minced
  • 1 teaspoon cornstarch

Instructions

  1. Preheat the oven to 350ºF.
  2. Pat the chicken dry and peel the skin from the drumsticks using a paper towel.
  3. In a bowl, mix onion powder, salt, paprika, and pepper; drizzle chicken with 1 tablespoon oil and season with the spice mix.
  4. In another bowl, combine honey, vinegar, ketchup, water, and minced garlic.
  5. Heat a large Dutch oven over medium-high heat; add the remaining oil and brown the chicken in batches.
  6. After browning, return all chicken to the Dutch oven, and pour the sauce over it, tossing to coat. Cover with a lid and transfer to the oven.
  7. Bake for 20 minutes, then rotate chicken, basting with sauce; cover and cook for another 20 minutes.
  8. Once cooked through, remove from the oven and switch to broil. Remove chicken from the pan and place on a foil-lined baking sheet.
  9. In a small bowl, whisk a few tablespoons of sauce with cornstarch.
  10. Bring the Dutch oven to a boil, add the cornstarch mixture, and boil until the sauce thickens. Gently stir in the chicken to coat with sauce.
  11. Return chicken to the baking sheet and place under the broiler for 1-2 minutes until lightly charred. Brush with remaining sauce before serving.

Notes

For extra crispy skin, make sure to broil the chicken at the end of cooking.
This dish pairs wonderfully with rice or roasted vegetables for a complete meal.
Adjust the sweetness by adding more or less honey depending on preference.
