- 1 cup uncooked rice white or brown
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1/2 tablespoon italian seasoning
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 teaspoons chicken bouillon powder
- 1 cup whole milk
- 1 cup chicken broth or stock
- 1/4 cup sour cream
- 1 cup extra sharp cheddar cheese freshly shredded
- 4 cups cooked chicken prepared rotisserie, shredded/chopped
- toppings as desired
Instructions
- Cook the rice following the package directions.
- In a large pan, melt the butter over medium heat. Whisk in the flour until smooth and combined, cooking for 1 minute while stirring constantly.
- Add the Italian seasoning, pepper, garlic powder, onion powder, and bouillon powder, stirring to combine.
- Gradually mix in the chicken stock and then the milk, stirring constantly until the mixture is smooth. Bring it to a boil, then reduce heat, cooking until thickened.
- Remove from heat and stir in the sour cream and shredded cheddar cheese, one quarter cup at a time, until melted and smooth. Mix in the shredded chicken and adjust seasoning to taste, adding salt if necessary.
- Prepare the desired toppings and place them in bowls.
- Serve rice on plates, spoon the chicken gravy over the rice, and finish with toppings. Serve immediately.
Notes
Feel free to use leftover chicken or a rotisserie chicken for convenience.
Choose a variety of toppings, such as diced tomatoes, olives, or green onions, to customize the dish.
