- 2 pounds sweet potatoes
- 2 Tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon chipotle powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- chopped parsley optional
Instructions
- Scrub the potatoes clean all over.
- Using a fork, pierce the skin of the potatoes all over.
- Wrap each potato in a damp paper towel.
- Microwave the potatoes for 5-7 minutes, flipping halfway through. They should have slight resistance when inserting a knife.
- Allow the potatoes to cool to the touch.
- In a small bowl, mix the olive oil, salt, pepper, chipotle powder, garlic powder, and onion powder together.
- Slice the potatoes into ¼ – ½ inch rounds and place them on a sheet tray.
- Brush both sides of the potato slices with the olive oil mixture.
- Prepare the grill.
- Grill the sweet potatoes on both sides over medium heat for 2-4 minutes until they have a sear and are heated through. Optionally, sprinkle with parsley before serving.
Notes
For extra flavor, let the sliced sweet potatoes marinate in the seasonings for 30 minutes before grilling.
You can add more or less spice based on your heat preference.
These potatoes can also be served as a side dish to grilled meats or on a salad.
