- 1–½ – 2 teaspoons sea salt or kosher salt
- 2 teaspoons cracked black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- cayenne pepper or chili powder (optional and to taste)
- 1 tablespoon light or dark brown sugar
- 4 bone-in or boneless pork chops (each ~1 inch thick)
- vegetable and olive oil (as needed)
Instructions
- Start by preparing your grill. If it needs more than 10 minutes to preheat, begin that process now.
- Combine all the seasonings in a small bowl to create a spice rub.
- Dry the pork chops thoroughly with paper towels to ensure even cooking.
- Rub the spice mix generously over both sides of the pork chops. Let them rest for 10-15 minutes to allow the flavors to penetrate.
- Heat your grill to high heat. Coat the grill grate well with vegetable oil to prevent sticking.
- Lightly drizzle olive oil on both sides of the pork chops before grilling. Place them on the hot grill and sear for 2 minutes on each side.
- Once seared, move the pork chops to indirect heat and lower the grill's temperature to medium. Close the grill lid and continue to cook for 4-10 minutes, checking the internal temperature after 4 minutes. The chops are ready when they reach 145°F internally.
- After cooking, let the pork chops rest for 5-8 minutes before serving.
Notes
For the best results, let the pork chops rest to absorb the seasoning and moisture before grilling.
Bone-in pork chops generally remain juicer and more flavorful than boneless.
Adjust the amount of cayenne or chili powder based on your spice preference.
