Grilled Meatloaf Sandwich

This Grilled Meatloaf Sandwich combines savory meatloaf with melted cheddar cheese, all sandwiched between crispy sourdough bread. It’s an easy and delightful comfort food perfect for lunch or a quick dinner.

Ingredients

  • 2 slices meatloaf, cold
  • 4 slices cheddar cheese
  • 4 slices sourdough, or other small bread slices
  • 2 tablespoons butter

Instructions

  1. Butter the outside of the four pieces of bread and set aside.
  2. In a small skillet, fry the cold meatloaf slices over medium heat until heated through and browned on each side.
  3. In the skillet, place one piece of bread butter side down, followed by a slice of cheese, then a slice of meatloaf, another slice of cheese, and top it with a second piece of bread butter side out. Repeat for the second sandwich.
  4. Grill the sandwich until the bottom is browned, then carefully flip it over to brown the other side and melt the cheese inside.
  5. Once both sides are golden and the cheese is melted, remove the sandwich from the skillet, plate it, and cut in half to serve.

Notes

Feel free to use any type of cheese you like.
Serve with your favorite dipping sauce or a side of salad for a complete meal.
