- salt to coat the sweet potatoes *see notes
- 1 large shallot, diced
- 4 garlic cloves, finely chopped
- 1 tablespoon ginger, finely chopped
- 1 pound ground turkey (or sub ground chicken, ground pork, ground beef, vegan substitute such as: Beyond Beef or Impossible Beef)
- 3 tablespoons gochujang chili paste (adjust to taste, gochujang can vary in spice levels)
- 1 1/2 tablespoons soy sauce- low sodium preferred
- 2 teaspoons honey or maple syrup
- 1 tablespoon rice vinegar
- 2 teaspoons toasted sesame oil
- 2 green onions, finely sliced
- Garnish (optional) -roasted peanuts, sesame seeds, fresh cilantro, sriracha or chili crisp.
Instructions
- Preheat the oven to 400°F.
- Brush or spray olive oil on both sides of the sweet potatoes, placing them cut side down on a parchment-lined baking sheet. Rub the skin with salt and roast for 20-30 minutes or until fork-tender.
- In a large skillet, sauté shallots, garlic, and ginger in avocado oil over medium heat for 2-3 minutes until fragrant. Add the ground turkey, breaking it up as it cooks, until just cooked through and no longer pink. Stir in gochujang paste, soy sauce, honey, rice vinegar, and sesame oil. Mix well and adjust seasoning if necessary before adding green onions.
- Once sweet potatoes are tender, flip them right side up, season the flesh with salt and pepper, and fluff a bit with a fork. For extra richness, add a pat of butter and top with generous scoops of the turkey filling.
- Garnish with more scallions, cilantro, and optional roasted peanuts or sesame seeds. Drizzle with chili crisp or sriracha for extra heat.
Notes
