  • Total Time: 2 hours 5 minutes
  • Yield: 16 servings 1x

Ingredients

Scale
  • 1 cup brown sugar
  • 1 cup evaporated milk
  • 1/2 cup butter cut into chunks
  • 3 egg yolks
  • 2 cups sweetened, shredded coconut
  • 1 cup toasted pecans roughly chopped
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 oz German chocolate
  • 1 cup boiling water
  • 1/2 cup neutral oil
  • 1/2 cup buttermilk
  • 1 3/4 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, mix brown sugar, evaporated milk, butter, and egg yolks. Cook over medium-low heat, stirring continuously until it boils and thickens, about 5 minutes.
  2. Remove from heat and stir in coconut, pecans, vanilla, and salt. Allow to cool for at least 30 minutes to thicken.
  3. Preheat your oven to 350ºF and grease a 9×13-inch baking pan.
  4. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  5. Chop the German chocolate and place it in a large heat-proof bowl. Pour boiling water over the chocolate and let sit for a minute to soften. Stir until completely melted.
  6. Mix in oil, buttermilk, and sugar until combined. Beat in eggs one at a time, followed by vanilla.
  7. Add dry ingredients to the chocolate mixture and mix until just combined.
  8. Pour the batter into the prepared baking pan. Bake for 35-40 minutes or until a tester comes out clean.
  9. Let the cake cool for 15 minutes, then spread frosting over the top. Allow to cool completely before serving.

Notes

Ensure the chocolate is fully melted for a smooth batter.
Frosting can be made ahead and refrigerated until ready to use.
For a richer flavor, let the frosted cake sit for a few hours before serving.
