Frosted Strawberry Cookies

  • 4 ounces (113g) full-fat block cream cheese, at room temperature
  • 1 and 1/3 cups (267g) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 and 1/2 cups (313g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (about 48g) freeze-dried strawberries, divided
  • 1/3 cup (67g) granulated sugar
  • 1/2 cup (about 12g) freeze-dried strawberries
  • 4 ounces (113g) full-fat brick cream cheese, softened to room temperature
  • 1/2 cup (8 tbsp; 113g) unsalted butter, softened to room temperature
  • 2 cups (240g) confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • pinch of salt, to taste
  • for topping: sliced fresh strawberries

Instructions

  1. Process half (1 cup/24g) of the freeze-dried strawberries into a powdered crumb and set aside.
  2. In a large bowl, cream the butter, cream cheese, and sugar together until light and fluffy, about 3 minutes. Scrape down the bowl and mix in the egg and vanilla until combined.
  3. Mix in the strawberry powder, flour, baking soda, and salt until just combined, then add the remaining cup of freeze-dried strawberries and beat until incorporated.
  4. Chill the dough for at least 2 hours to firm up and enhance the flavor.
  5. Preheat the oven to 350°F (177°C) and line your baking sheets with parchment paper.
  6. Scoop and roll dough into balls, then coat with granulated sugar and space them on the baking sheets.
  7. Bake for 13–14 minutes or until edges are set and centers appear soft. Cool on the baking sheet.
  8. Prepare the frosting by beating butter and cream cheese until creamy, then add confectioners’ sugar, strawberry powder, and vanilla. Mix until fluffy and adjust with salt as needed.
  9. Spread or pipe the frosting on the cooled cookies and top with fresh strawberry slices.

Notes

Chilling the dough is essential for the best flavor and texture.
Storing frosted cookies at room temperature is acceptable for up to 1 day, but refrigerate for longer freshness.
