Flautas

These flautas are a delightful combination of roasted chicken, fresh veggies, and cheese, all wrapped in a crispy tortilla. Simple to make and perfect for a quick dinner or snack, they’re packed with flavor and sure to please any palate!

Ingredients

  • 2 cups roasted chicken, shredded
  • 1 1/2 tablespoons extra virgin olive oil
  • 1/2 small, diced yellow onion (about 3/4 cup)
  • 1/2 poblano, seeded and diced (about 3/4 cup)
  • 2/3 cup fresh corn kernels (or canned corn, rinsed and drained)
  • 1/3 cup prepared salsa
  • 2 tablespoons sour cream
  • 4 ounces shredded pepper jack cheese (about 1 cup)
  • 14 6-inch flour tortillas warmed
  • 5 cups frying oil of choice
  • salt and pepper to taste
  • 1/2 cup sour cream
  • 2 tablespoons hot sauce (of choice)
  • 1 zested and juiced lime (about 3 1/2 tablespoons of lime juice)

Instructions

  1. Preheat oil in a deep pot over medium heat to 350˚F. Place shredded chicken into a mixing bowl and set aside.
  2. In a medium sauté pan, heat olive oil over medium-high. Add diced onion, poblano, and corn and sauté for about 6 minutes, seasoning with salt and pepper. If using canned or frozen corn, add it after sautéing the onion and poblano for 5 minutes.
  3. Pour the sautéed onion mixture over the chicken and mix well.
  4. Add the remaining filling ingredients to the chicken mixture and stir until well combined. Season to taste with salt and pepper.
  5. Take a heaping 1/4 cup of the filling and place it on one side of a tortilla, shaping it into a log.
  6. Roll the tortilla tightly and secure it with toothpicks. Transfer the rolled flauta to a baking sheet.
  7. Repeat the rolling process with the remaining tortillas and filling.
  8. Fry the flautas in hot oil, a few at a time, until golden brown, about 3 to 4 minutes. Remove them from the oil and place them on a cooling rack lined baking sheet. Serve warm with a dipping sauce.

Notes

For extra spice, add diced jalapeños to the filling mix.
Serve alongside guacamole and fresh salsa for dipping.
You can bake the flautas in a preheated oven at 400°F for a healthier option.
