  • 1 teaspoon white balsamic vinegar
  • sea salt and black pepper
  • 4 slices sourdough bread
  • 3/4 cup grated sharp cheddar cheese
  • 24 ounces torn brie (leaving the rind on)
  • 1/4 cup fresh basil, chopped
  • 4 tablespoons salted butter, at room temperature
  • 1 tablespoon mayo (optional)
  • 2 tablespoons grated asiago cheese
  • 24 tablespoons everything bagel spice (optional)
  • honey, to drizzle, if desired

Instructions

  1. Arrange the tomato slices on a cutting board and sprinkle with sea salt and black pepper. Let them sit for 15 minutes to draw out excess moisture.
  2. In a bowl, combine the sharp cheddar, torn brie, and chopped basil to mix the cheeses.
  3. In another bowl, mix together the salted butter, mayo (if using), grated asiago cheese, and everything bagel spice. Spread this butter mixture on the outside of each slice of sourdough bread.
  4. Create sandwiches by placing the cheese mixture and tomato slices between 2 pieces of buttered bread, ensuring the buttered sides face out. Repeat with the remaining ingredients to form 2 sandwiches.
  5. Heat 1–2 tablespoons of butter or oil in a large skillet over medium heat. Cook the sandwiches for about 3–5 minutes on each side, until golden and crisp.
  6. If desired, drizzle with honey before serving, then enjoy your sandwich.

Notes

For extra flavor, consider adding more fresh basil or a sprinkle of additional seasoning.
