- 1 tomato, thinly sliced
- 1 teaspoon white balsamic vinegar
- sea salt and black pepper
- 4 slices sourdough bread
- 3/4 cup grated sharp cheddar cheese
- 2–4 ounces torn brie (leaving the rind on)
- 1/4 cup fresh basil, chopped
- 4 tablespoons salted butter, at room temperature
- 1 tablespoon mayo (optional)
- 2 tablespoons grated asiago cheese
- 2–4 tablespoons everything bagel spice (optional)
- honey, to drizzle, if desired
Instructions
- Arrange the tomato slices on a cutting board and sprinkle with sea salt and black pepper. Let them sit for 15 minutes to draw out excess moisture.
- In a bowl, combine the sharp cheddar, torn brie, and chopped basil to mix the cheeses.
- In another bowl, mix together the salted butter, mayo (if using), grated asiago cheese, and everything bagel spice. Spread this butter mixture on the outside of each slice of sourdough bread.
- Create sandwiches by placing the cheese mixture and tomato slices between 2 pieces of buttered bread, ensuring the buttered sides face out. Repeat with the remaining ingredients to form 2 sandwiches.
- Heat 1–2 tablespoons of butter or oil in a large skillet over medium heat. Cook the sandwiches for about 3–5 minutes on each side, until golden and crisp.
- If desired, drizzle with honey before serving, then enjoy your sandwich.
Notes
For extra flavor, consider adding more fresh basil or a sprinkle of additional seasoning.
Grate the cheeses fresh for the best melt and flavor.
Adjust the amount of everything bagel spice according to your taste.
