Earthquake Cake

This Earthquake Cake features delightful layers of coconut and pecans beneath a rich chocolate cake, all swirled with creamy butter and cheese. It’s the ideal sweet treat for gatherings or cozy nights in—simple to prepare and utterly scrumptious!

  • Total Time: 1 hour 10 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 (15.25 ounce) box german chocolate cake mix, plus additional ingredients called for on the package
  • ½ cup salted butter, softened at room temperature
  • 8 ounce block cream cheese, softened at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup confectioner's sugar
  • ¾ cup chocolate chips
  • optional, for serving: vanilla ice cream, whipped cream, chocolate syrup, or caramel sauce

Instructions

  1. Preheat the oven to 350°F and grease a deep 9×13-inch baking dish to prevent sticking.
  2. Spread the shredded coconut and chopped pecans evenly across the bottom of the prepared baking dish.
  3. Prepare the chocolate cake mix according to the instructions provided on the package.
  4. Pour the prepared cake batter over the layer of coconut and pecans in the dish.
  5. In a mixing bowl, beat together the softened butter, cream cheese, and vanilla extract until the mixture is smooth.
  6. Gradually add the confectioner’s sugar and continue mixing until well combined.
  7. Dollop spoonfuls of the cream cheese mixture over the cake batter.
  8. Gently swirl the cream cheese into the cake batter using a knife; be careful not to over-mix to maintain the ribbon effect.
  9. Sprinkle the chocolate chips evenly on top of the batter and cream cheese mixture.
  10. Bake in the oven for 40 to 45 minutes, checking for doneness by pressing the center of the cake with your fingers.
  11. Allow the cake to cool in the pan before slicing; for warm servings, slice after about 20 minutes and serve with your choice of ice cream or whipped cream.

Notes

For a richer flavor, use fresh shredded coconut instead of sweetened.
Allow the cake to cool entirely for cleaner serving if cutting into squares.
Serve warm for a gooey experience with ice cream for added indulgence.
