- 5 cups vegetable oil
- 2 cups + 2 tablespoons (298g) all-purpose flour
- 2 ½ teaspoons (11g) baking powder
- ¼ cup (50g) granulated sugar
- ½ teaspoon salt
- 1 cup (237ml) heavy whipping cream
- ½ cup (119ml) whole milk

Instructions
- Whisk together the all-purpose flour, baking powder, salt, and granulated sugar in a large bowl.
- Add heavy whipping cream and whole milk. Stir using a wooden spoon or spatula until the dough is cohesive and gooey.
- Using a cookie scoop, portion out 1 tablespoon of dough at a time. You can place these directly into the hot oil or chill them on a baking sheet lined with parchment paper.
- Heat vegetable oil in a 3-quart saucepan to 350°F. Use a thermometer to check the temperature. Keep a cookie sheet lined with paper towels nearby.
- Fry 3-4 donut holes at a time, ensuring not to overcrowd the pan. Monitor oil temperature and adjust heat as needed. Fry for about 3-5 minutes, turning halfway through until dark golden brown.
- Using a slotted spoon, remove the donut holes and place them on the paper towel-lined baking sheet. Allow to cool slightly before rolling in cinnamon sugar or glazing.
Notes
Make sure to monitor the oil temperature closely to achieve the perfect fry without burning.
You can top with cinnamon sugar or a glaze of your choice for added flavor.
