- 1 teaspoon salt (optional)
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 pounds boneless, skinless chicken breasts
- ½ cup finely diced yellow onion
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, drained and chopped
- 1 cup chicken broth
- 8 ounce block cream cheese, softened and cubed
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 Tablespoon cornstarch
- 1 Tablespoon cold water
- 2 cups fresh spinach
- fresh basil or parsley (optional, for serving)
Instructions
- In a small bowl, mix 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon Italian seasoning.
- Season both sides of the chicken breasts with the mixture and place them in the bottom of a 5-6 quart slow cooker.
- Add the diced onion, minced garlic, and chopped sun-dried tomatoes over the chicken.
- Pour chicken broth around the chicken, and place soft cream cheese on top and around the chicken.
- Cover and cook on low for 4–6 hours until the chicken is tender and reaches an internal temperature of at least 165°F.
- Remove the chicken from the sauce; you can shred, cut it up, or leave it whole.
- Whisk the softened cream cheese into the broth mixture until smooth.
- Stir in the heavy cream and grated Parmesan cheese.
- In a small bowl, combine cornstarch with cold water and whisk it into the sauce.
- Add fresh spinach, cover, and cook on high for 10–15 minutes until the sauce thickens and spinach wilts.
- Return the chicken to the crock pot, spoon sauce over the top, and serve with fresh basil or parsley if desired.
Notes
For best results, do not open the lid during cooking to maintain the heat.
Feel free to adjust the seasoning to taste before cooking. You can also add other vegetables like bell peppers for extra flavor.
This dish pairs well with pasta or rice for a complete meal.
