- 1/4 cup greek yogurt
- 1/4 cup sour cream
- 2 tablespoons mayonnaise
- 1 chipotle pepper in adobo sauce minced
- 1 tablespoon adobo sauce
- 1/2 tablespoon lime juice
- Salt
- 2 tablespoons neutral oil divided
- 1 pound ground chicken
- 1/2 cup enchilada sauce
- 1 tablespoon taco seasoning
- 12 corn tortillas
- 6 oz shredded cheese
Instructions
- Whisk together the yogurt, sour cream, mayonnaise, chipotle pepper, adobo sauce, and lime juice to prepare the sauce. Adjust salt to taste and refrigerate.
- Preheat the oven to 425ºF and brush 1 tablespoon of oil over a large baking sheet.
- Heat a large skillet over medium-high heat and add the ground chicken, cooking until browned and cooked through.
- Stir in the enchilada sauce and taco seasoning, cooking for another minute until hot.
- Heat the tortillas one at a time, adding 1 tablespoon of cheese, followed by the chicken mixture, and another tablespoon of cheese. Fold and place on the baking sheet.
- Repeat this process with the remaining tortillas, cheese, and filling.
- Brush the tops of the tacos with the remaining oil.
- Bake in the preheated oven for about 20 minutes until crispy, flipping halfway through, then serve the tacos with the sauce.
Notes
Feel free to add toppings such as lettuce, tomatoes, or avocado for extra flavor.
If you prefer a milder flavor, adjust the amount of chipotle pepper used in the sauce.
