- 2 (14 ounce cans) chickpeas, drained and rinsed
- 4 garlic cloves, minced
- ⅔ cup tahini
- ¼ cup hot honey, plus more for drizzling
- ½ lemon, juiced
- kosher salt and pepper
- ¼ to ½ cup ice water
- olive oil for drizzling
Instructions
- Reserve a few chickpeas for topping the hummus later.
- In a food processor, combine chickpeas, garlic, tahini, hot honey, lemon juice, and ½ teaspoon each of salt and pepper. Blend for 2 to 3 minutes, scraping down the sides every 30 seconds to ensure thorough mixing.
- While the processor is running, gradually add in the ice water and continue blending until the mixture is smooth and creamy. Taste and adjust seasoning as necessary.
- Spread the hummus onto a serving dish. Top with reserved chickpeas, a drizzle of olive oil, and a generous drizzle of hot honey. Finish with a sprinkle of salt and pepper before serving.
Notes
Adjust the spice level by varying the amount of hot honey used.
For extra creaminess, blend in a bit more tahini or olive oil as desired.
