- 2 ¼ cups all-purpose flour
- ⅔ cup unsweetened cocoa powder

- 3 teaspoons cornstarch

- 1 cup butter softened

- 2 tablespoon corn syrup
- 1 cup brown sugar packed
- ⅓ cup sugar
- 1 ½ cups semi-sweet chocolate chips
- ½ cup heavy cream
- ½ cup cosmic sprinkles
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together flour, cocoa powder, baking soda, cornstarch, and salt, then set aside.
- In a stand mixer, beat the softened butter, vanilla extract, eggs, corn syrup, brown sugar, and granulated sugar for 3 minutes until well mixed.
- Add the dry ingredients to the wet mixture and mix until just combined, being careful not to over-mix.
- Using a medium cookie scoop, portion out the batter onto a lined baking sheet.
- Bake in the preheated oven for 10 minutes.
- Remove cookies from the oven, gently flatten them with a spatula, and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Heat heavy cream in a saucepan over medium heat until it simmers, then remove from heat, add chocolate chips, cover, and allow to melt for 10 minutes. Mix until smooth.
- Once the cookies are cool, spoon the melted chocolate over the tops, and sprinkle with cosmic sprinkles. Let the chocolate set for about 1 hour.
