- 4 slices marble rye (or plain rye)
- 2–4 tablespoons butter (softened)
- 1/4 cup thousand island dressing (plus more to taste)
- 4 slices swiss cheese
- 1/2 pound sliced corned beef (deli-sliced thin)
- 1/4 cup sauerkraut (drained and squeezed dry)
Instructions
- Prepare a tray with parchment paper for easy assembly.
- Spread butter on one side of each slice of bread and position them butter-side down on the tray.
- Spread 1 tablespoon of Thousand Island dressing on each slice, topping each with a slice of Swiss cheese.
- Divide the corned beef between two slices, folding as needed. Add drained sauerkraut on top.
- Preheat a large skillet or griddle over medium-low heat for 3 minutes.
- Transfer the sandwiches to the pan using a spatula and press lightly. Cook until golden brown on one side, about 3-4 minutes. Adjust heat as necessary.
- Flip and cook the other side for another 3-4 minutes, until golden brown and cheese is melted.
- Slice sandwiches in half and serve immediately.
Notes
For extra flavor, consider adding more Thousand Island dressing on the side for serving.
Make sure to squeeze excess moisture from the sauerkraut to avoid a soggy sandwich.
