  • 8 ounces (228 g) white bar chocolate, coarsely chopped
  • ½ cup (100 g) white chocolate chips
  • ½ teaspoon vanilla extract
  • 5 to 6 teaspoons ground cinnamon

Instructions

  1. Line a sheet pan with parchment paper and set aside.
  2. In a microwave-safe bowl, combine the chopped white bar chocolate and white chocolate chips. Microwave at 50-60% power in 30-second intervals, stirring until melted.
  3. Once the white bar chocolate is melted, let it rest to help the white chocolate chips melt from the residual heat. Microwave in intervals if needed until fully melted.
  4. Add vanilla and 1 teaspoon of ground cinnamon, stirring until smooth. Gradually mix in remaining cinnamon, one teaspoon at a time, ensuring it's fully combined.
  5. Spread the mixture into a rectangle on the prepared sheet pan (about 11×8 inches) and refrigerate for 20-30 minutes until set.
  6. Once set, chop the mixture into small bits, allowing it to sit at room temperature for easier cutting if necessary.
  7. Store the cinnamon bits in a container or bag in the freezer for best results. Add to recipes straight from the freezer to prevent melting.
