  • 1 large egg
  • 2 teaspoons table salt
  • 1 ½ cups mini cinnamon chips
  • Butter for brushing tops of loaves

Instructions

  1. In a mixer bowl, combine 3 cups of flour, sugar, and yeast. Mix well.
  2. Pour in warm water and blend until mixed. Cover and let sit for 10 to 15 minutes.
  3. Add oil, egg, salt, 1 cup of flour, and cinnamon chips. Mix at medium speed, gradually incorporating more flour until the dough pulls away from the bowl.
  4. Knead the dough for 4 to 5 minutes.
  5. Let the dough rise in a warm place until doubled, about 1 hour.
  6. Grease two 8 1/2-X-4 1/2-inch loaf pans and set aside.
  7. Divide the dough into two pieces, shape into thick squares, and roll into tight logs. Seal the seams.
  8. Preheat oven to 350°F, ensuring the rack is in the middle.
  9. Place the loaves in the pans, cover, and let rise until just above the pan edge.
  10. Bake for 32 to 35 minutes until golden and an internal thermometer reads 195°F.
  11. Remove from oven, cool slightly, brush with butter, and let cool completely before slicing.
