Cinnamon Bun Bites

Cinnamon Bun Bites are a delightful treat, bursting with irresistible cinnamon flavor and a sweet glaze. Simple to make, these bites are perfect for any occasion, serving as a comforting snack or dessert that everyone loves.

  • Total Time: 0 hours
  • Yield: 10 servings 1x

Ingredients

Scale
  • 2 teaspoons coarse salt
  • 4 large eggs
  • 4 1/2 cups all-purpose flour, plus more if needed
  • 2 tablespoons ground cinnamon
  • 1 envelope instant yeast
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar, divided
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup warm water
  • 2 tablespoons whole milk

Instructions

  1. In the bowl of a stand mixer, combine warm water, yeast, and 1/2 cup flour until a thick paste forms.
  2. Stir in the eggs, 1/4 cup of the sugar, and salt until combined.
  3. Attach the dough hook and add the remaining 4 cups of flour, kneading on medium speed for 4 to 5 minutes until smooth.
  4. Incorporate the room temperature butter into the dough, kneading for about 10 minutes until smooth and elastic. Add more flour if the dough is sticky.
  5. Turn the dough onto a clean surface and knead by hand until very smooth for about 3 minutes.
  6. Transfer the dough to a clean bowl, cover, and let it rise until doubled, approximately 1 1/2 to 2 hours.
  7. After rising, punch down the dough to remove air bubbles. Lightly butter a pie plate and combine the remaining 1 cup of sugar with the cinnamon in a small bowl.
  8. Roll the dough into 1-inch balls. Dip each ball in melted butter, then roll in the cinnamon sugar, placing them onto the prepared pie plate. Stack the balls to create a dome shape.
  9. Cover with plastic wrap and let the dough rise until it has increased by half, about 1 hour.
  10. Preheat your oven to 350°F. Unwrap the dough balls and place the pie plate on a baking sheet.
  11. Bake for 50 to 55 minutes until golden and firm, while preparing the glaze.
  12. Whisk together the powdered sugar, salt, butter, milk, and vanilla to form a smooth paste for the glaze.
  13. Once baked, cool the bites for 15 minutes before drizzling with the glaze.
  14. Serve warm.

Notes

If the dough feels too sticky, add additional flour gradually while kneading.
These treats are best enjoyed warm straight from the oven for maximum flavor.
Feel free to adjust the amount of cinnamon in the sugar mixture to suit your taste.
