Ingredients
Scale
- ¼ cup (50g) granulated sugar
- 1 ½ tablespoons (12g) corn starch
- 3 tablespoons (15g) cocoa powder
- 2 cups (474ml) milk (whole, 2%, or nonfat)
- ½ cup (85g) chocolate chips
- 2 tablespoons (28g) butter , diced
- ½ teaspoon vanilla
Instructions
- In a medium saucepan, whisk together the granulated sugar, cornstarch, and cocoa powder.
- Gradually whisk in the milk and heat over medium until it reaches a boil, stirring frequently.
- Once boiling, continue to whisk constantly for a few minutes until it thickens slightly.
- Remove from heat and stir in the chocolate chips and diced butter, whisking until melted and smooth.
- Stir in the vanilla extract, then transfer the pudding to a heat-safe bowl.
- Cover the surface of the pudding with wax paper, ensuring it touches the pudding to prevent a skin from forming.
- Allow to cool for about 15 minutes at room temperature, then refrigerate for 4 to 6 hours until set.
Notes
For a richer flavor, try adding a pinch of salt to enhance the chocolate taste.
Make sure to cover the pudding properly to avoid a skin forming on top while cooling.
For a twist, add a dash of espresso powder to elevate the chocolate flavor.
