- 1 cup all purpose flour, i used unbleached
- 1 cup white whole wheat flour, regular whole wheat flour would work
- 1/2 cup brown sugar, not packed
- 1 ⅛ tsp baking soda
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 cup semi sweet chocolate chips
- 1 large egg, beaten
- 2 tbsp melted butter
- 1 cup apple sauce
- 1 ½ cups shredded zucchini, not packed, not squeezed (from about 1 1/4 large)
Instructions
- Preheat the oven to 325°F and spray a 9×5-inch loaf pan with cooking spray.
- In a large bowl, combine the all purpose flour, white whole wheat flour, brown sugar, baking soda, and salt, mixing well.
- Gently stir in the semi-sweet chocolate chips until evenly distributed.
- In another bowl, mix the beaten egg, vanilla, melted butter, apple sauce, and shredded zucchini until well combined. Then, add this mixture to the flour mixture and stir until just blended.
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool for about 10 minutes in the pan before transferring it to a wire rack to cool completely before slicing.
Notes
Make sure not to squeeze the shredded zucchini, as this keeps the bread moist.
Experiment with adding nuts for extra crunch or other spices like cinnamon for flavor variation.
Store any leftovers in an airtight container at room temperature for up to three days.
