Chicken Kabobs

These Chicken Kabobs are bursting with flavor from marinated chicken thighs, peppers, and onions grilled to perfection. Ideal for quick dinners or outdoor gatherings!

Ingredients

  • 2 lbs. chicken thighs (boneless & skinless)
  • ½ tbsp salt
  • 2 tbsp honey
  • ¼ cup greek yogurt
  • 4 garlic cloves (minced)
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 lemon
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tsp black pepper (freshly cracked)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large yellow onion

Instructions

  1. Gather all ingredients and prepare the lemon by cutting it in half, saving one half for serving wedges.
  2. Trim excess fat from the chicken thighs and cut them into pieces, about 2-3 inches in size.
  3. Sprinkle ½ tbsp salt over the chicken pieces and toss. Allow to sit for 20 minutes while making the marinade.
  4. In a mixing bowl, whisk together honey, Greek yogurt, minced garlic, oregano, smoked paprika, juice from half a lemon, vegetable oil, soy sauce, and black pepper.
  5. Pour the marinade over the salted chicken, tossing to combine. Let it marinate for 20 minutes or up to 2 hours in the refrigerator.
  6. If using wooden skewers, soak them in warm water during the marinade time and while preparing vegetables.
  7. Seed and cut bell peppers into 2-inch pieces and cut onions into similarly sized pieces. Quarter the remaining lemon half for serving.
  8. Preheat the grill to 450℉. Assemble the skewers by alternating chicken and vegetables, leaving space between ingredients.
  9. Brush skewers with extra marinade before grilling.
  10. Place skewers on the grill without overcrowding and grill for 7-8 minutes, avoiding unnecessary movement to achieve grill marks.
  11. After 7-8 minutes, flip the skewers and turn them 2-3 times until fully cooked.
  12. Check for doneness using a meat thermometer; chicken is done at 165℉. Serve with lemon wedges.

Notes

For a sweeter taste, marinate chicken longer than 20 minutes.
Using metal skewers eliminates the soaking time needed for wooden skewers.
