- 2 1/4 cups all-purpose flour

- dash of crushed red pepper flakes
- 1/2 cup unsalted butter (melted and cooled to room temperature)
- 1/2 cup cottage cheese (at room temperature)
- 1/2 cup milk (at room temperature)
- 2 large eggs (at room temperature)
- 1/2 cup shredded zucchini
- 1/2 cup shredded carrots
- 2 green onions (sliced)
- 1 cup cheddar cheese
- 1/2 cup finely chopped cooked bacon
- 1/4 cup freshly grated parmesan cheese
- flaky sea salt (for sprinkling)
Instructions
- Preheat the oven to 375°F and prepare a 12-cup muffin pan with liners or nonstick spray.
- In a medium bowl, whisk the flour, baking powder, salt, garlic powder, and crushed red pepper flakes together. Set aside.
- In a large bowl, combine the cooled melted butter, cottage cheese, milk, and eggs, whisking until smooth. Add the shredded zucchini, carrots, and green onions.
- Incorporate the dry ingredients into the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the batter thick. Fold in the cheddar cheese, bacon, and Parmesan cheese gently.
- Distribute the batter evenly into the muffin cups prepared earlier.
- Sprinkle a touch of flaky sea salt on top of each muffin.
- Bake for 18 to 22 minutes or until the tops are golden and a toothpick comes out clean when inserted into the center.
- Once baked, let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
- Serve them warm with butter.
Notes
Muffins can be stored in an airtight container for up to three days.
For added flavor, experiment with different kinds of cheese.
These muffins freeze well; just wrap them and place them in a freezer bag.
