- 3 eggs
- 1/3 cup water
- 1/4 cup buffalo sauce
- 1 whole chicken, cut up into parts or 8 pieces of your favorite parts
- 1 tsp kosher salt
- 25 cracks black pepper divided
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 cups ground Chedz cheese cracker crumbs about 4 oz of crackers
- peanut oil, for frying
Instructions
- Heat the oil to 350°F in a deep fryer or heavy-bottomed skillet with at least 3 inches of oil.
- In a large bowl, whisk together eggs, water, and buffalo sauce. Set aside.
- Season the chicken pieces on all sides with kosher salt, 5 cracks of black pepper, garlic powder, and onion powder.
- In another large bowl, combine Chedz cheese cracker crumbs with the remaining black pepper. Set aside.
- Once the oil is heated, dip each chicken piece into the egg mixture, letting the excess drip off, then coat in the Chedz crumbs.
- Carefully lower the chicken into the hot oil without overcrowding; work in batches. Dark meat cooks for about 13 to 14 minutes, while white meat cooks for about 8 to 10 minutes. Ensure internal temperature reaches 165°F.
- Drain the fried chicken on a wire rack and sprinkle with kosher salt before serving warm.
Notes
Make sure to monitor the oil temperature to prevent burning.
Feel free to use any parts of the chicken you prefer for this recipe.
Adjust the spiciness by varying the amount of buffalo sauce.
