- 4 cups (500 g) all-purpose flour, divided, plus more if needed
- 2 envelopes (about 4 ½ teaspoons) rapid-rise yeast
- ¼ cup (50 g) granulated sugar
- 1 teaspoon kosher salt
- 1 ½ cups (366 g) whole milk, warmed (110°f to 115°f)
- 1 large egg, room temperature, beaten
- 1 tablespoon garlic, minced
- 1 tablespoon fresh chives, minced
- 2 cups (226 g) sharp cheddar cheese, shredded
- 1 large egg, room temperature, beaten
- 1 tablespoon water
- 1 recipe cowboy butter, melted
Instructions
- In a stand mixer bowl with a dough hook, combine 3 cups of flour, yeast, sugar, and salt. Mix on low until combined.
- Pour in the warm milk and beaten egg; knead for 2 minutes at medium speed, scraping the sides as necessary.
- Add another ½ cup of flour and continue kneading for 2 more minutes.
- Incorporate the remaining ½ cup flour, garlic, chives, and shredded cheddar cheese. Knead until a soft, slightly tacky dough ball forms, about 3 to 5 minutes, adjusting flour or water as needed.
- Transfer the dough to a greased bowl, cover, and let it rise until doubled in size, about 45 minutes.
- Prepare a 9×13-inch baking dish by spraying it with nonstick cooking spray.
- Once risen, punch down the dough and divide it into 12 equal pieces, shaping them into balls and placing them in the baking dish.
- Cover and allow the rolls to rise again for 30 minutes or until puffy.
- Preheat the oven to 375°F.
- For the egg wash, whisk the egg and water together and gently brush it over the tops of the rolls.
- Bake the rolls for 18 to 22 minutes until golden brown.
- Immediately after baking, brush the tops generously with melted Cowboy Butter.
- Let the rolls cool slightly before serving warm.
Notes
If the dough seems too wet, add flour one tablespoon at a time while kneading.
Avoid over-kneading the dough to keep the rolls tender and light.
For a variation, consider adding different herbs or cheeses to suit your taste.
