Cheesesteak Pasta

  • 1 pound penne uncooked
  • 1 pound beef steak ribeye or sirloin thinly sliced
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 1 large red bell pepper chopped
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup beef broth low sodium
  • 4 ounces cream cheese
  • 6 slices provolone cheese
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • fresh parsley chopped

Instructions

  1. Cook the penne pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced steak and cook until browned and just cooked through for about 5-7 minutes. Remove the steak and set it aside.
  3. In the same skillet, add the remaining olive oil. Add the chopped onions and bell peppers, cooking while stirring often for about 4-5 minutes until they are soft and slightly caramelized. Add the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the heavy cream and beef broth, then season with salt and pepper. Bring this mixture to a simmer, stirring frequently for about 3-4 minutes to allow the sauce to thicken slightly. Lower the heat to medium and mix in the cream cheese and provolone cheese, stirring until melted and smooth.
  5. Add the drained pasta and cooked steak back into the skillet, tossing everything together until the pasta and steak are well coated in the creamy sauce.
  6. Taste the dish and adjust the seasoning with more salt and pepper if needed. Garnish with freshly chopped parsley and serve immediately.

Notes

For a spicy kick, add some red pepper flakes while cooking the vegetables.
You can substitute ribeye or sirloin with your preferred cut of steak.
Stir in some spinach or mushrooms for added flavor and nutrition.
