Cheeseburger Quesadilla

This Cheeseburger Quesadilla combines the classic flavors of a cheeseburger into a delicious, cheesy quesadilla. Perfect for a quick dinner or a fun twist on a comfort food favorite, it’s packed with ground beef, cheddar cheese, and a tangy sauce.

  • ¼ cup (56 g) mayonnaise
  • 2 tablespoons ketchup
  • 3 tablespoons finely chopped dill pickles
  • 1 tablespoon cooking oil
  • ⅓ cup (47 g) finely chopped yellow onion
  • 1 lb (453 g) ground beef
  • Salt and pepper, for seasoning
  • 3 tablespoons ketchup
  • 2 teaspoons yellow mustard
  • ½ cup (98 g) finely chopped dill pickles
  • 8 oz (g) mild shredded cheddar cheese
  • 68 8” flour tortillas, (see note)
  • Oil or butter, for cooking

Instructions

  1. Start by making the sauce; mix together the mayonnaise, ketchup, and dill pickles. Cover and refrigerate to let flavors combine.
  2. Heat a medium skillet over medium heat and add the cooking oil. Once hot, add the chopped onion and cook until translucent.
  3. Add in the ground beef, seasoning with salt and pepper, and cook while breaking it apart until browned. Drain the excess grease to keep tortillas from getting soggy.
  4. Mix in the ketchup and yellow mustard, stirring everything together.
  5. Fold in the dill pickles and take off the heat.
  6. Lay a flour tortilla flat and sprinkle half with about 2 tablespoons of cheese. Add about ⅓ cup of the ground beef mixture and top with another 2 tablespoons of cheese. Fold the tortilla over to cover the filling.
  7. Heat a clean 10-inch (or larger) skillet over medium to medium-high heat. Add about half a teaspoon of oil or butter and spread it around.
  8. Carefully place the quesadilla into the skillet (two can fit usually) and press down gently. Cook until golden brown, then flip and cook until the cheese is melted and the tortilla is browned on both sides.
  9. Remove from the skillet, cut in half, and serve with the dipping sauce.

Notes

Use low-fat mayonnaise and cheese for a lighter version.
Feel free to add more vegetables like bell peppers for extra flavor and crunch.
Serve with salsa or guacamole for an added twist.
