Cabbage and Potsticker Stir-Fry

  • ⅓ cup seasoned rice vinegar
  • ⅓ cup soy sauce
  • 2 tablespoons toasted sesame oil
  • 1 teaspoon granulated sugar
  • 15 frozen potstickers (pork, chicken, or vegetable)
  • 4 tablespoons canola or peanut oil, divided
  • 6 cups roughly chopped napa cabbage
  • 2 medium carrots, peeled and cut into matchstick pieces
  • 1 red bell pepper, cored, seeded, and cut into matchstick pieces
  • 6 green onions, white and green parts diagonally cut into ¾-inch pieces
  • 3 garlic cloves, minced or pressed
  • 2 tablespoons minced fresh ginger
  • 12 red thai chilies, cored, seeded, and minced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Heat 2 tablespoons of canola oil in a large non-stick skillet over medium-high heat. Arrange 15 frozen potstickers flat-side down in a single layer.
  2. Cook for 2-3 minutes until the bottoms are golden brown. Carefully add enough water to cover the bottom third of the dumplings, then cover with a lid and steam until the water evaporates, about 5-8 minutes.
  3. Remove the lid and cook for another 1-2 minutes to crisp up the bottoms. Transfer the potstickers to a plate and cover loosely with foil.
  4. In a small bowl, whisk together soy sauce, seasoned rice vinegar, toasted sesame oil, and sugar. Set this sauce aside.
  5. In the same skillet, heat the remaining 2 tablespoons of canola oil over high heat until it's nearly smoking. Add the chopped napa cabbage, sliced carrots, sliced bell pepper, and green onions. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  6. Add the minced garlic, minced ginger, and Thai chiles to the frying vegetables. Continue stir-frying for another 2-3 minutes.
  7. Pour the sauce over the stir-fried vegetables and stir for 1-2 minutes. Finally, nestle the crispy potstickers into the vegetable mix, garnish with toasted sesame seeds and additional chopped chilies if desired.

Notes

You can use any variety of potstickers based on your dietary preference.
Adjust the number of Thai chilies according to your heat preference.
Feel free to add other vegetables like broccoli or snap peas for more nutrition.
