Buffalo Chicken Sandwich

  • 2 boneless, skinless chicken breasts
  • ¼ cup all-purpose flour
  • 1 egg, lightly beaten
  • ⅛ cup milk
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup finely ground bread crumbs
  • ½ cup canola oil for frying, divided
  • 4 tablespoons butter, divided
  • 8 ounces frank’s redhot buffalo sauce
  • 4 brioche buns
  • 10 ounces tri-color coleslaw mix
  • ¾ cup thinly sliced red cabbage
  • ⅛ cup granulated sugar
  • ⅛ cup kosher salt
  • 23 green onions, sliced
  • 1 small carrot, julienned into thin strips
  • 1 rib celery, sliced
  • ¼ cup fresh parsley, chopped
  • ½ cup ranch dressing, store-bought or homemade
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Slice each chicken breast in half lengthwise to create four fillets.
  2. Dredge each chicken fillet in flour, then in an egg-milk mixture, and finally in breadcrumbs. Place on a wire rack and let rest for 20 minutes.
  3. Mix the coleslaw ingredients—coloslaw mix, red cabbage, granulated sugar, and kosher salt—in a bowl and strain to draw out moisture. Rinse and dry.
  4. Combine chopped green onions, shredded carrot, diced celery, parsley, and ranch dressing into the coleslaw mixture, adjusting seasoning as needed.
  5. Heat canola oil and butter in a skillet. Fry the chicken until golden and crispy, about 2-3 minutes on each side until cooked through. Transfer to a plate and repeat with remaining chicken.
  6. Melt remaining butter with buffalo sauce in another skillet. Dip the fried chicken in the buffalo sauce to coat it well.
  7. Toast brioche buns, assemble the sandwich with chicken and coleslaw, and serve with extra buffalo sauce and coleslaw.

Notes

For extra flavor, marinate the chicken in buffalo sauce before breading.
Feel free to adjust the heat level by adding more or less buffalo sauce according to your taste.
Homemade ranch dressing works great in this recipe for a more fresh flavor.
