- 1 pound ground beef
- 1/3 cup buffalo wing sauce
- 8 (6 inch) flour tortillas
- 1 cup thinly sliced lettuce
- 1/3 cup chopped celery
- 1/2 cup julienned or shredded carrot
- 1/4 cup prepared blue cheese dressing
- 1/4 cup blue cheese crumbles
- 2 tablespoons chopped fresh cilantro
Instructions
- Heat a large skillet over medium-high heat and add the ground beef. Cook until no longer pink, breaking it up as it cooks.
- Once the beef is cooked through, stir in the buffalo sauce and cook for an additional minute.
- If desired, char the tortillas over a gas stove or heat them in a dry pan.
- To assemble, top each tortilla with some of the beef mixture, adding the lettuce, celery, and carrots. Drizzle with blue cheese dressing, sprinkle on blue cheese, and serve.
Notes
For extra heat, add more buffalo wing sauce to the beef mixture.
Feel free to customize toppings with your favorites like avocado or jalapeños.
