- 1 ½ lbs. carrots, peeled and sliced into ½-inch thick rounds
- ¼ cup salted butter, cubed
- ¼ cup packed light brown sugar
- 1 tablespoon freshly-squeezed orange juice
- ¼ teaspoon kosher salt
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- In a large skillet, boil about 2 cups of water. Add the sliced carrots, reduce the heat to low, cover, and simmer for 7-9 minutes until crisp-tender.
- Drain the water and transfer the carrots to a bowl.
- In the same skillet, melt the butter, brown sugar, orange juice, and salt over medium heat. Allow the mixture to bubble gently for 2-3 minutes while stirring until slightly thickened and glossy.
- Return the carrots to the skillet and stir gently until they are well coated and warmed through, about 1 more minute.
- Garnish with chopped parsley and serve.
Notes
Adjust the sweetness by varying the amount of brown sugar to suit your taste.
For an extra zest, consider adding a pinch of ginger or cinnamon to the glaze.
