Ingredients

  • 12 large eggs
  • 2 cups cottage cheese (whole milk)
  • ¼ cup whole milk, half and half or plain yogurt
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • 812 ounces pepper jack cheese, grated
  • 23 cans (4-ounce) diced chilies
  • ½ cup green onions or cilantro (or use half and half of both)

Instructions

  1. Preheat the oven to 350°F.
  2. Blend the eggs, cottage cheese, milk, garlic powder, salt, pepper, and oregano until smooth.
  3. Fold in the grated cheese (reserve ½ cup for topping), diced chilies, and most of the green onions or cilantro, mixing gently.
  4. Transfer the mixture to a greased 9×13-inch baking dish and top with the reserved cheese.
  5. Bake in the lower-middle rack for 35-50 minutes, checking halfway through. Cover with foil if edges darken too quickly.
  6. Garnish with remaining green onions or cilantro and serve warm or at room temperature.

Notes

Feel free to substitute the pepper jack cheese with another cheese of your choice.
For extra flavor, consider adding cooked breakfast sausage or diced vegetables to the mixture.
