- 4 tablespoons salted butter
- 1 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons salted butter, grated
- 1 cup whole buttermilk
- 1 cup brown sugar
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla bean paste
- 4–5 cups fresh or frozen (do not thaw) blueberries or mixed berries
- 1/2 cup fruit jam (any berries work)
Instructions
- Preheat the oven to 375°F. Add 4 tablespoons of butter to a 9×13-inch baking dish or a 10-inch skillet, then place it in the oven to melt the butter for about 10 minutes.
- In a bowl, combine 1 cup plus 2 tablespoons of flour, baking powder, and salt. Mix in the 6 tablespoons of grated butter until the mixture resembles small blueberry clumps. Stir in the buttermilk and 3/4 cup of brown sugar until just combined.
- Carefully remove the hot dish from the oven. Add the blueberries or mixed berries, then top with 1/4 cup of brown sugar, the jam, vanilla bean paste, and 2 tablespoons of flour. Toss the mixture gently to combine.
- Spoon the batter over the berry mixture, not worrying too much about covering everything evenly. Sprinkle the top with granulated sugar.
- Bake for 45–55 minutes until the center is set and the edges are golden brown.
Notes
Serve warm with a scoop of vanilla ice cream for an extra treat.
This cobbler can be made ahead of time and reheat it in the oven before serving.
