Instructions
- In a medium pan, mix blueberries and ¼ cup sugar.
- Whisk together ¼ cup water and corn starch, add to the pan.
- Cook over medium heat, stirring often, until bubbly and thickened, about 5-8 minutes.
- Allow the mixture to cool to room temperature.
Notes
For a thicker filling, allow the cream cheese to soften completely before mixing.
Feel free to add a touch of lemon zest for added flavor.
For a classic crust, ensure the graham crackers are finely crushed.
