- 1/4 cup water (60g)
- 1 tsp white vinegar or apple cider vinegar (5g)
- 1/4 tsp pure vanilla extract (1g)
- 1/3 cup pure maple syrup or honey (80g)
- 3 tbsp oil (36g)
- 1/2 cup blueberries (60g)
Instructions
- Grease a donut pan well and preheat the oven to 350° Fahrenheit (176° Celsius).
- Combine flour, baking powder, salt, and optional spices in a large bowl; stir well.
- Mix in the water, sweetener, vinegar, oil, and vanilla extract until well combined.
- Gently fold in the blueberries to avoid bursting or press them into each donut before baking.
- Spread the batter into the prepared pan, filling each mold two-thirds full.
- Bake for 10 minutes on the center rack, until light and fluffy in the centers.
- Allow to cool, then run a knife around the sides and transfer to a serving plate.
- Frost as desired and enjoy!
- Store leftovers loosely covered at room temperature overnight or in the refrigerator for up to five days. Freeze any extras for up to three months.
Notes
These donuts can be made using whole grain spelt, white, gluten-free, or oat flour.
For a fat-free option, substitute oil with applesauce or banana.
