- 1 cup (200 g) granulated sugar
- 1 cup (125 g) all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon kosher salt
- 1 cup (240 g) whole milk
- ½ cup (1 stick / 113g) unsalted butter, melted
- 2 cups (280 g) fresh or frozen blackberries
- ½ cup (100 g) granulated sugar
- 1 teaspoon lemon juice
- 1 pinch ground cinnamon
- 2 tablespoons turbinado sugar
Instructions
- Preheat your oven to 350°F.
- In a medium bowl, combine the granulated sugar, flour, baking powder, and kosher salt, whisking together.
- Gradually add the whole milk, then mix in the melted unsalted butter until the batter is smooth and well combined.
- Pour the batter into a 10-inch cast-iron skillet or a similar baking dish.
- In another bowl, mix the blackberries with granulated sugar, lemon juice, and ground cinnamon. Toss gently to coat the blackberries.
- Carefully spoon the blackberry mixture over the batter without stirring it in.
- Sprinkle the top with turbinado sugar for a crunchy finish.
- Bake in the preheated oven for 40 to 45 minutes, or until the top is golden and the center is set.
- Allow to cool slightly before serving.
Notes
For added flavor, consider using a mix of different berries with the blackberries.
Serve warm with a scoop of vanilla ice cream for a delicious dessert ensemble.
