  • 2 pounds raw jumbo shrimp 16-20 per pound, deveined, peeled, tails left on
  • 1 tablespoon canola oil or similar neutral cooking oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon cayenne pepper
  • 6 tablespoons unsalted butter cut into 4 pieces, divided
  • 4 cloves garlic finely minced
  • 4 green onions thinly sliced, with white/light green and dark green parts divided
  • 3 tablespoons worcestershire sauce
  • 2 tablespoons freshly squeezed lemon juice
  • lemon wedges for serving
  • crusty french bread sliced, for serving

Instructions

  1. Preheat your oven to 450°F and prepare a rimmed baking sheet with parchment paper.
  2. Dry the shrimp and place them on the baking sheet. Toss with oil and spice mixture, spreading them into a single layer.
  3. Prep remaining ingredients while the oven preheats.
  4. Roast the shrimp for 3 to 5 minutes until pink and opaque, forming a 'C' shape.
  5. Meanwhile, melt one piece of butter in a saucepan over medium-low heat. Add minced garlic and white/light green parts of green onions, cooking until fragrant.
  6. Turn off the heat and whisk in Worcestershire sauce and lemon juice.
  7. Gradually whisk in remaining butter, ensuring it melts completely before adding the next piece for a creamy sauce. Adjust seasoning with salt and pepper as needed.
  8. Pour sauce over the roasted shrimp, toss gently to coat, and garnish with reserved green onion tops. Serve hot with lemon wedges and crusty bread.

Notes

Fresh shrimp is recommended for the best flavor; avoid previously frozen shrimp if possible.
Ensure that the butter is added gradually for a smooth sauce texture.
