- 3 cups old fashioned oats
- 2/3 cup roughly chopped pecans
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 3/4 cup milk
- 1/3 cup maple syrup
- 2 eggs
- 1/4 cup melted butter
- 1/4 cup greek yogurt
- 2 teaspoons vanilla
- 12 oz fresh berries
- Yogurt or whipped cream for serving optional
Instructions
- Preheat the oven to 350ºF and grease or line a 9-inch baking dish.
- In a large bowl, mix together the oats, pecans, cinnamon, baking powder, salt, and nutmeg.
- Add the milk, maple syrup, eggs, melted butter, Greek yogurt, and vanilla to the bowl. Stir until well combined.
- Set aside 1/2 cup of berries and fold the rest into the oatmeal mixture.
- Pour this mixture into the prepared baking dish and top with the reserved berries.
- Bake for 35-40 minutes until the center is just set. Remove from the oven and let sit for about 10 minutes before serving.
- Enjoy as is or with a dollop of yogurt or whipped cream.
Notes
Store leftovers in the refrigerator for up to 3 days. Reheat in the microwave or oven.
Feel free to customize with different fruits or nuts based on your preference.
Can be made ahead and baked in the morning for a quick breakfast.
