  • 3 cups old fashioned oats
  • 2/3 cup roughly chopped pecans
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 3/4 cup milk
  • 1/3 cup maple syrup
  • 2 eggs
  • 1/4 cup melted butter
  • 1/4 cup greek yogurt
  • 2 teaspoons vanilla
  • 12 oz fresh berries
  • Yogurt or whipped cream for serving optional

Instructions

  1. Preheat the oven to 350ºF and grease or line a 9-inch baking dish.
  2. In a large bowl, mix together the oats, pecans, cinnamon, baking powder, salt, and nutmeg.
  3. Add the milk, maple syrup, eggs, melted butter, Greek yogurt, and vanilla to the bowl. Stir until well combined.
  4. Set aside 1/2 cup of berries and fold the rest into the oatmeal mixture.
  5. Pour this mixture into the prepared baking dish and top with the reserved berries.
  6. Bake for 35-40 minutes until the center is just set. Remove from the oven and let sit for about 10 minutes before serving.
  7. Enjoy as is or with a dollop of yogurt or whipped cream.

Notes

Store leftovers in the refrigerator for up to 3 days. Reheat in the microwave or oven.
Feel free to customize with different fruits or nuts based on your preference.
Can be made ahead and baked in the morning for a quick breakfast.
