- 1 pound chicken tenderloins
- 1 pound red potatoes cut in 1/2 inch wedges
- ½ large red onion cut into 1-inch cubes
- 1 lemon thinly sliced
- 3 tablespoons olive oil
- juice from 1 lemon
- 2 cloves garlic minced
- 1 teaspoon dried italian seasoning
- 1 teaspoon garlic salt
- ½ teaspoon kosher salt
- ½ teaspoon crushed red pepper
- ½ teaspoon black pepper
- Fresh chopped parsley for garnish optional
Instructions
- Preheat the oven to 425°F.
- Line a baking dish with aluminum foil, leaving enough to wrap around the ingredients and vent.
- In a large bowl, toss the chicken, potatoes, onion, and sliced lemon with olive oil.
- Add lemon juice, garlic, Italian seasoning, garlic salt, kosher salt, red pepper, and black pepper. Toss again to coat.
- Arrange the chicken, potatoes, and onion in the center of the foil and top with sliced lemon.
- Seal the packet by closing the ends and rolling down the top, allowing room for heat to vent.
- Bake for 40-50 minutes until the potatoes are tender and chicken reaches at least 165°F. Garnish with parsley, if using, and serve.
