Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons minced dill pickles
  • 2 teaspoons yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 pound bacon diced
  • 1 pound ground beef
  • 2 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 1/2 tablespoon worcestershire sauce
  • 1 tablespoon butter
  • 4 8 to 9-inch flour tortillas
  • 6 oz shredded cheddar cheese
  • Shredded lettuce and diced tomatoes optional

Instructions

  1. In a bowl, mix all sauce ingredients and refrigerate until needed.
  2. Cook diced bacon in a large skillet until crisp, then remove and drain excess grease, leaving about 1 tablespoon.
  3. Add ground beef to the skillet and cook, breaking it apart, until fully browned and cooked through.
  4. Stir in the cooked bacon, ketchup, mustard, and Worcestershire sauce; heat thoroughly.
  5. In a separate skillet over medium heat, melt half the butter. Place a tortilla in the pan, sprinkle cheese on one half, add 1/4 of the beef mixture, and top with more cheese. Fold over the tortilla and cook.
  6. Repeat with another tortilla and filling, cooking two quesadillas at a time until golden brown and cheese is melted. Flip to cook the other side.
  7. Serve quesadillas sliced into triangles with optional lettuce, tomato, and special sauce.
