Ingredients

  • 2 1/2 Tbsp rice vinegar I prefer natural
  • 1 1/2 Tbsp honey
  • 2 cloves garlic grated or finely minced
  • 2 tsp chili garlic sauce
  • 2 tsp toasted sesame oil
  • 1 tsp grated ginger
  • 2 green onions sliced
  • sesame seeds for garnish

Instructions

  1. In a large mixing bowl, add the thinly sliced mini cucumbers and kosher salt. Toss well to combine.
  2. Allow the mixture to sit for 20-30 minutes to draw out excess moisture and enhance the flavors.

Notes

For extra crunch, add sliced bell peppers or radishes.
Adjust the amount of honey based on your sweetness preference.
