Instructions
- Preheat the oven to 375ºF and grease a 12-cup muffin pan.
- In a medium bowl, mix the all-purpose flour, cinnamon, baking powder, baking soda, and salt together.
- In another bowl, combine the sugar and neutral oil. Stir in the beaten eggs, applesauce, and vanilla extract. Mix the wet ingredients into the dry ingredients until just combined.
- Gently fold in the chopped apples.
- Spoon the batter into the muffin pan, distributing it evenly among the cups.
- In a small bowl, mix the brown sugar, two tablespoons of flour, and the additional cinnamon. Cut in the butter until crumbly, then sprinkle over the muffin batter.
- Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan before transferring to a wire rack.
- Store leftover muffins in an airtight container.
