Instructions
- Preheat your oven to 375°F.
- Sift the cake flour and ½ cup of granulated sugar together, repeating this process four times.
- In a large metal bowl, whisk together egg whites, salt, cream of tartar, vanilla, and almond extract until soft peaks form.
- Gradually add sugar, ⅓ cup at a time, totaling 1 ⅓ cups, blending well after each addition without scraping the bowl.
- Fold in the flour mixture in four additions using a large metal spoon, turning the bowl often as you mix.
- Pour the batter into an ungreased 10-inch tube pan without scraping the mixture from the bowl, and cut through the batter with a metal spatula.
- Bake in the preheated oven for 30-35 minutes, then cool the cake upside down.
Notes
Ensure your bowls and utensils are clean and dry, as fat can prevent the egg whites from whipping properly.
For added flavor, consider topping the cake with fresh fruit or a light glaze.
The cake can be stored at room temperature for a couple of days in an airtight container.
