  • ½ teaspoon Italian seasoning
  • 1 (14.5 ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 6 cups vegetable stock (or chicken broth or beef broth)
  • 1 cup alphabet noodles, uncooked
  • ½ teaspoon salt (or more to taste)
  • ½ teaspoon ground black pepper (or more to taste)

Instructions

  • Heat olive oil in a large pot over medium-high heat.
  • Add onion, garlic, carrots, celery, potato, green beans, and Italian seasoning; sauté for 5 minutes.
  • Stir in diced tomatoes and tomato paste, then add vegetable stock and simmer for 10 minutes.
  • Add uncooked alphabet noodles and cook for 8-10 minutes until al dente.
  • Season with salt and pepper to taste, then serve warm.

Notes

Taste and adjust seasoning before serving.
Add cooked chicken or beans for extra protein.
