- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 ribs celery, diced
- 1 medium yellow potato, diced into ½-inch cubes
- 2 cups green beans, ends trimmed and cut into ½-inch pieces
- ½ teaspoon Italian seasoning
- 1 (14.5 ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 6 cups vegetable stock (or chicken broth or beef broth)
- 1 cup alphabet noodles, uncooked
- ½ teaspoon salt (or more to taste)
- ½ teaspoon ground black pepper (or more to taste)
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onion, garlic, carrots, celery, potato, green beans, and Italian seasoning; sauté for 5 minutes.
- Stir in diced tomatoes and tomato paste, then add vegetable stock and simmer for 10 minutes.
- Add uncooked alphabet noodles and cook for 8-10 minutes until al dente.
- Season with salt and pepper to taste, then serve warm.
Notes
Taste and adjust seasoning before serving.
Add cooked chicken or beans for extra protein.
Avoid overcooking the noodles to keep the texture.
