  • 4 large eggs + 1 egg yolk, at room temperature
  • 2 tablespoons (28g/30ml) vegetable oil
  • 1 tablespoon pure vanilla extract
  • 1 and 1/4 cups (156g) all-purpose flour (spooned & leveled)
  • 1 and 1/4 cups (105g) unsweetened dutch-process cocoa powder
  • 1 teaspoon salt
  • 1 and 2/3 cups (300g) semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and line a 9×13-inch metal baking pan with parchment paper, leaving an overhang for easy lifting of the brownies.
  2. In a microwave-safe bowl, combine the butter and chopped chocolate. Melt in 30-second intervals, stirring until fully melted and smooth. Allow to cool slightly.
  3. In a large mixing bowl, blend granulated sugar, light brown sugar, and eggs using a mixer on medium-high speed until pale, about 4 minutes.
  4. Pour the warm chocolate mixture into the sugar and egg blend, add vegetable oil and vanilla, then mix until combined.
  5. Sift flour, cocoa powder, and salt into the batter, then stir in the chocolate chips until fully combined. Spread the thick batter evenly in the prepared pan.
  6. Bake for 30 minutes. Test doneness with a toothpick; if wet batter sticks, return to the oven for 2 additional minutes. Aim for a toothpick with moist crumbs to avoid over-baking.
  7. Once baked, cool the brownies in the pan on a cooling rack. Use the parchment overhang to lift them out and cut into squares once cool.
  8. Store any leftovers covered at room temperature for up to one week.
