Instructions
- Preheat the oven to 400°F and prepare a baking sheet by lining it with aluminum foil and spraying lightly with cooking spray.
- Wash and dry the baby red potatoes. Halve small potatoes and quarter larger ones, aiming for 1-inch uniform pieces. Place the potatoes in a large bowl or zip-top bag.
- In a small bowl, whisk together the olive oil and Old Bay seasoning until combined.
- Pour the oil mixture over the potatoes and toss them until they are evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring there is space between each piece.
- Roast the potatoes for 30-40 minutes, stirring halfway through. The potatoes are ready when golden brown and slightly crispy outside, yet tender when pierced with a fork. Garnish with chopped fresh parsley if desired and serve hot.
Notes
For extra crispiness, arrange the potatoes in a single layer and ensure they aren’t overcrowded on the baking sheet.
