- 4 medium zucchini, grated

- 1 lb. ground turkey
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- ¼ cup parmesan cheese, grated
- 1 tablespoon Italian seasoning, divided
- ½ teaspoon black pepper
- ½ teaspoon onion powder
Instructions
- Preheat oven to 400°F.
- Grate zucchini and drain excess moisture.
- Mix grated zucchini with eggs, parmesan, black pepper, onion powder, and 1 teaspoon Italian seasoning.
- Press zucchini mixture into a greased baking pan and pre-bake for 20 minutes.
- Sauté onion and bell pepper in olive oil until soft.
- Add garlic and ground turkey; cook until browned.
- Stir in marinara sauce and remaining Italian seasoning.
- Spread the turkey mixture over the baked zucchini crust.
- Top with mozzarella and remaining Italian seasoning.
- Bake for an additional 20 minutes until cheese is melted.
Notes
Ensure the zucchini is well drained to prevent a soggy crust.
