- 1/2 tsp ground cloves
- 1/2 cup chopped nuts (optional)
- 1 cup powdered sugar
- 2–3 tbsp orange juice (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and prepare loaf pans.
- Beat the eggs in a mixing bowl until thick and pale.
- Mix in sugar, vegetable oil, and orange juice.
- Stir in shredded zucchini until evenly combined.
- In another bowl, whisk together flour, baking powder, baking soda, salt, orange zest, cinnamon, and cloves.
- Gradually add dry ingredients to wet mixture, stirring gently.
- Divide batter between loaf pans and bake for 45-55 minutes.
- Cool the loaves for 10 minutes in pans, then transfer to a wire rack.
- Prepare glaze by whisking powdered sugar and orange juice, then drizzle over bread once cooled.
Notes
Use fresh zucchini for the best moisture and texture.
Feel free to add chocolate chips or dried fruits for variations.
